Quarantine Cuisine: Herb- and Quinoa-Encrusted Haddock Filet

Herb- and Quinoa-Encrusted Haddock Filet
with Honey & Orange Citronette, Spinach Gratin, and Lemon-Scented Scallion Rice
(Makes One Serving)

5 oz. Haddock Filet (Pat Dry Before Breading)
Pinch Kosher Salt
Pinch Black Pepper
2 oz. Quinoa
2 T Clarified Butter or Olive Oil
4 oz. Dry White Wine
1 T Fresh Italian Parsley (Finely Chopped)
1 T Fresh Dill (Finely Chopped)

Step 1. Pre-heat Oven to 325 degrees Fahrenheit
Step 2. Heat Up Butter or Oil in Skillet
Step 3. Season One Side of Haddock with Salt and Pepper and Half of Fresh Herbs
Step 4. Following Instructions on Package, Cook Quinoa Halfway and Spread Out on Tray in Order to Cool Quickly
Step 5. When Panko is Partially Cool, Add Remaining Herbs and Pinch of Salt, Mix Well, and Press onto Herb-Encrusted Side of Haddock
Step 6. Sear Haddock (Quinoa Side Down) in Hot Skillet for 1 min, then Place Skillet in Oven for 7 - 10 min.
Step 7. After Removing from Oven, allow Haddock to Rest for 1 min, then Using Spatula, Carefully Remove Haddock, and Flip onto Plate (Quinoa Side Up)

1/4 Cup Italian Dressing
1/4 Cup Sherry Vinegar
2 tsp Honey 1 Lemon (Zest and Juice)
1 tsp Dill, Chopped
4 “Good Shakes” Tabasco
1/2 Cup Extra Virgin Olive Oil

Step 1. Using a Blender, Add Honey, Sherry Vinegar, Lemon Juice and Zest and Blend on “Low”
Step 2. Slowly Add All Remaining Ingredients while Gradually Increasing Speed in Order to Emulsify Correctly

1 Bag (8 oz. ) Spinach with Stems Removed
1 Shallot, Minced Very Fine
1/4 tsp Nutmeg, Freshly Grated
1 Pinch, Kosher Salt
1 Pinch, Freshly-Ground Black Pepper
8 oz. Heavy Cream
3 oz. Pepper Jack Cheese (Shredded to Melt Faster)
1/4 Cup Panko Crumbs
2 tsp Butter, Melted
1 tsp Olive Oil
1 T Grated Parmesan or Romano Cheese

Step 1. Heat Oil in Large Skillet and Add Shallots. “Sweat” Shallots until Translucent
Step 2. Add Spinach and Salt & Pepper. When Spinach is Slightly Wilted, Add Nutmeg and Cream, Stir, then Reduce by Half
Step 3. Add Pepper Jack Cheese and Stir
Step 4. In Separate Bowl, Add Panko, Grated Parmesan (or Romano) and Butter, and Mix Well
Step 5. Place Panko on top of Spinach Mixture and Cook 3-5 min until Crumbs are Golden Brown

1 Cup Minute Rice
1 Cup of Water
1 Lemon (Juice and Zest)
1 Pinch Kosher Salt
1 Pinch Freshly-Ground Black Pepper
1/4 Cup Scallions (Sliced on the Bias)
1/2 oz. Limoncello Liqueur (Optional)
1 tsp Extra Virgin Olive Oil

Step 1. Put Water in Saucepan
Step 2. Add all Ingredients (except Scallions)
Step 3. Follow Minute Rice Box Recipe
Step 4. When Rice is Done, Fold in Scallions and Olive Oil
