La Serre's John Trimble created this recipe for Quarantine Cuisine:
Retro Creamy Chicken, Sweet Potato, Green Bean and Rice Casserole
Ingredients:
1 Bag of brown Rice
2-3 Chicken breasts cut into 1-2 inch pieces
1-2 Sweet potatoes, peeled and cubed into 1 inch pieces
1 can of green beans
1 jar of alfredo sauce (or 1 cup of heavy cream)
1 egg whipped
Salt and pepper
One clove garlic minced (if availbable)
1/2 white onion diced (if available)
1 cup breadcrumbs (if available)
1-2 cup Shredded parm or mild cheese (if available)
Preheat oven to 400f
Step 1. Brown Rice - saute garlic and onion and Cook rice according to package except take off heat 5-10 minutes early so still slightly al dente or crisp and set aside to cool
Step 2. Saute chicken and sweet potatoes in pan with 2 table spoons of oil for 4-5 minutes stirring occasionally, drain and set aside
Step 3. Mix 1-2 cup alfredo or cream(dependent on how rich and creamy you prefer), egg, cheese and breadcrumbs in seperate bowl then add rice, sweet potoatoes, green beans and chicken Season with salt and pepper
Step 4. Pour mixture into caserole dish and sprinkle cheese and breadcrumbs over top (if available)
Step 5. Bake for 20 mins and finish with broiler for 3-4 mins( if top was coated with breadcrumbs and cheese )
Allow 5 minutes to cool and enjoy!
